  2. While the rice cooks, heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Season the 1 and 1/2 pounds chicken breast pieces with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Add to the hot skillet and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
  3. Add the diced yellow onion to the skillet and cook until softened, about 3 minutes. Stir in the sliced cremini mushrooms and cook for another 3-4 minutes until they begin to release their liquid.
  4. Stir in the 1/4 cup tomato paste and cook for 1 minute, ensuring it coats the chicken and vegetables. Pour in the 1 cup heavy cream, 1/2 cup ketchup, and 1 tablespoon Dijon mustard. Stir well to combine. Bring the sauce to a gentle simmer and cook for 2-3 minutes, allowing it to thicken slightly.
  5. Season with the remaining 1/4 teaspoon salt, or to taste. Remove from heat.
  6. Serve the chicken stroganoff immediately over the fluffy white rice. Top generously with crispy potato sticks before serving.
