Ingredients
- 1 tablespoon olive oil
- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 0.75 teaspoon salt (divided)
- 0.25 teaspoon black pepper
- 1 yellow onion (medium, diced)
- 8 ounce cremini mushrooms (sliced)
- 0.25 cup tomato paste
- 1 cup heavy cream
- 0.5 cup ketchup
- 1 tablespoon Dijon mustard
- 2 cup white rice (uncooked)
- 4 cup water
- 5 ounce crispy potato sticks
Instructions
- Begin cooking the rice: In a medium saucepan, combine 2 cups white rice, 4 cups water, and 1/4 teaspoon salt. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Remove from heat and keep covered.
- While the rice cooks, heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Season the 1 and 1/2 pounds chicken breast pieces with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Add to the hot skillet and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
- Add the diced yellow onion to the skillet and cook until softened, about 3 minutes. Stir in the sliced cremini mushrooms and cook for another 3-4 minutes until they begin to release their liquid.
- Stir in the 1/4 cup tomato paste and cook for 1 minute, ensuring it coats the chicken and vegetables. Pour in the 1 cup heavy cream, 1/2 cup ketchup, and 1 tablespoon Dijon mustard. Stir well to combine. Bring the sauce to a gentle simmer and cook for 2-3 minutes, allowing it to thicken slightly.
- Season with the remaining 1/4 teaspoon salt, or to taste. Remove from heat.
- Serve the chicken stroganoff immediately over the fluffy white rice. Top generously with crispy potato sticks before serving.
Notes
Leftovers can be stored in the refrigerator for up to 3 days, though potato sticks are best added just before serving to maintain crispness.
