  1. Season the pounded chicken breasts with 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper on both sides.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
  3. While chicken cooks, place 2 pounds peeled and quartered russet potatoes in a large pot and cover with cold water. Add 1/4 teaspoon salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
  4. Drain the potatoes and return to the pot. Add 1/2 cup whole milk, 2 tablespoons unsalted butter, and the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Mash until smooth and creamy.
  5. In a separate saucepan, bring a small amount of water to a boil. Add 12 ounces trimmed fresh green beans and steam for 5-7 minutes, or until tender-crisp. Serve the golden chicken cutlets with creamy mashed potatoes and steamed green beans.

Ensure chicken is cooked through before serving. Mashed potatoes can be made creamier with a little more milk or butter if desired.
