Ingredients
- 1.5 pound boneless, skinless chicken breast (pounded thin)
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon olive oil
- 2 pound russet potatoes (peeled and quartered)
- 0.5 cup whole milk
- 2 tablespoon unsalted butter
- 12 ounce fresh green beans (trimmed)
Instructions
- Season the pounded chicken breasts with 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper on both sides.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- While chicken cooks, place 2 pounds peeled and quartered russet potatoes in a large pot and cover with cold water. Add 1/4 teaspoon salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
- Drain the potatoes and return to the pot. Add 1/2 cup whole milk, 2 tablespoons unsalted butter, and the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Mash until smooth and creamy.
- In a separate saucepan, bring a small amount of water to a boil. Add 12 ounces trimmed fresh green beans and steam for 5-7 minutes, or until tender-crisp. Serve the golden chicken cutlets with creamy mashed potatoes and steamed green beans.
Notes
Ensure chicken is cooked through before serving. Mashed potatoes can be made creamier with a little more milk or butter if desired.
