  1. Place chicken cutlets between two sheets of plastic wrap and pound them to about 1/4-inch thickness if not already thin. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  2. Dredge each cutlet in the all-purpose flour, shaking off any excess.
  3. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 3-4 minutes per side, or until golden brown and cooked through.
  4. While chicken cooks, prepare green beans: microwave according to package directions, typically 5-7 minutes. Once cooked, set aside.
  5. Prepare dairy-free mashed potatoes: Heat 2 cups of dairy-free milk and 2 tablespoons dairy-free margarine in a saucepan over medium heat until almost boiling. Remove from heat and stir in the instant mashed potato flakes until smooth. Season to taste.
  6. Serve the Golden Chicken Cutlets immediately with the prepared dairy-free mashed potatoes and green beans.

Notes

For best results, do not overcrowd the skillet when frying chicken. Cook in batches if necessary.
