Ingredients
- 1 pound chicken breast (boneless, skinless, cut into 4 thin cutlets)
- 0.5 cup all-purpose flour
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon olive oil
- 1 package green beans (frozen, steam-in-bag)
- 1.5 cup instant mashed potato flakes
- 2 cup dairy-free milk (unsweetened)
- 2 tablespoon dairy-free margarine
Instructions
- Place chicken cutlets between two sheets of plastic wrap and pound them to about 1/4-inch thickness if not already thin. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Dredge each cutlet in the all-purpose flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 3-4 minutes per side, or until golden brown and cooked through.
- While chicken cooks, prepare green beans: microwave according to package directions, typically 5-7 minutes. Once cooked, set aside.
- Prepare dairy-free mashed potatoes: Heat 2 cups of dairy-free milk and 2 tablespoons dairy-free margarine in a saucepan over medium heat until almost boiling. Remove from heat and stir in the instant mashed potato flakes until smooth. Season to taste.
- Serve the Golden Chicken Cutlets immediately with the prepared dairy-free mashed potatoes and green beans.
Notes
For best results, do not overcrowd the skillet when frying chicken. Cook in batches if necessary.
