Instructions

  1. In a bowl, toss the sliced pork tenderloin with the reduced-sodium tamari, gochugaru, grated ginger, and half of the minced garlic. Let stand for 5 minutes.
  2. Heat 1 teaspoon of toasted sesame oil in a large nonstick skillet over medium-high heat. Add the sliced cremini mushrooms and sauté for 4 to 5 minutes until browned and tender. Remove mushrooms and set aside.
  3. In the same skillet, add the marinated pork tenderloin in a single layer. Sear over high heat for 3 to 4 minutes, flipping once, until browned and cooked to an internal temperature of 145°F. Transfer pork to a plate and let rest for 3 minutes.
  4. Add the remaining 1 teaspoon toasted sesame oil and the remaining minced garlic to the skillet over medium heat. Add the baby spinach and kosher salt, tossing gently for 1 to 2 minutes until just wilted.
  5. Divide the wilted spinach and sautéed mushrooms evenly among 3 plates. Top with the seared pork medallions, garnish with sliced green onions, and serve.
