Goan Fish Curry

  1. Season the cod fillet chunks with 1/2 teaspoon ground turmeric and 1/2 teaspoon salt. Set aside.
  2. To prepare coconut rice, combine basmati rice, 2 cups of water, and 1/2 cup of the coconut milk in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  3. In a separate bowl, toss diced English cucumber with lime juice, 1/4 teaspoon salt, and 2 tablespoons of chopped fresh cilantro to make a quick cucumber salad.
  4. Heat coconut oil in a deep pan over medium heat. Add sliced red onion and cook for 5 minutes until soft.
  5. Add chopped Roma tomatoes, remaining 1/2 teaspoon ground turmeric, ground coriander, and ground cumin. Cook for 4 minutes until tomatoes break down.
  6. Pour in remaining coconut milk, remaining 1/2 cup water, and remaining 3/4 teaspoon salt. Bring broth to a gentle simmer.
  7. Gently place seasoned cod fillet pieces into simmering sauce. Cover and cook over low heat for 7 to 9 minutes until fish flakes easily.
  8. Garnish curry with remaining chopped fresh cilantro and serve plated alongside the warm coconut rice and crisp cucumber salad.

Notes

Handle cod gently after adding to the curry so the delicate fish chunks stay whole.
