  1. Combine brown basmati rice with 3 cups of water in a medium saucepan. Bring to a boil, cover tightly, reduce heat to low, and simmer undisturbed for 40 minutes until water is absorbed and grains are tender.
  2. Heat olive oil in a large Dutch oven or pot over medium heat. Add chopped yellow onion and cook for 5 minutes until softened and translucent.
  3. Stir in minced garlic, grated fresh ginger, garam masala, ground turmeric, ground cumin, and kosher salt. Sauté for 1 to 2 minutes until intensely aromatic.
  4. Add the diced chicken breast, crushed tomatoes, light coconut milk, and rinsed chickpeas. Stir thoroughly to combine all ingredients.
  5. Bring to a gentle boil, then lower heat to medium-low. Cover and simmer for 20 minutes, stirring occasionally, until the chicken is tender and registers 165°F on a meat thermometer.
  6. Uncover, stir in the frozen green peas, and simmer for another 3 minutes until heated through. Ladle the hot curry over fluffy portions of cooked brown rice.

Notes

Curry flavors deepen and harmonize over time in the fridge. When reheating, add a splash of water if the sauce thickens.
