Ingredients
- 1 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 15 ounce crushed tomatoes
- 0.5 cup beef broth
- 1 teaspoon dried Italian seasoning
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 16 ounce potato gnocchi
- 5 ounce fresh baby spinach
- 0.25 cup Parmesan cheese (grated, for serving)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat and set beef aside.
- Add the diced yellow onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the crushed tomatoes and 1/2 cup beef broth. Stir in the dried Italian seasoning, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Bring the sauce to a simmer.
- Add the potato gnocchi and return the cooked ground beef to the skillet. Stir gently and simmer for 5-7 minutes, or until the gnocchi are tender and cooked through.
- Stir in the fresh baby spinach until it wilts, about 1-2 minutes.
- Serve hot, topped with optional grated Parmesan cheese.
Notes
For an even richer flavor, you can add a splash of red wine with the crushed tomatoes. Fresh basil torn over the top makes a great garnish.
