  1. Cook 2 cups jasmine rice with 4 cups water according to package directions or in a rice cooker. While rice cooks, prepare the rest of the meal.
  2. In a small bowl, whisk together 1/2 cup soy sauce, 1/4 cup apple cider vinegar, 2 tablespoons brown sugar, 1 teaspoon grated fresh ginger, 2 minced garlic cloves, and 2 tablespoons reserved pineapple juice.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds pork tenderloin pieces and cook for 5-7 minutes, turning occasionally, until browned on all sides and almost cooked through.
  4. Pour the sauce mixture over the pork in the skillet. Bring to a simmer. In a small cup, whisk 1 tablespoon cornstarch with 2 tablespoons water to form a slurry. Stir the slurry into the simmering sauce.
  5. Add 1 can pineapple chunks to the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the pork and pineapple. Meanwhile, steam 1 pound fresh broccoli florets until tender-crisp, about 3-5 minutes.
  6. Serve the glazed pork and pineapple immediately over the jasmine rice, with steamed broccoli on the side.

Notes

Ensure pork is cut into uniform pieces for even cooking. Adjust soy sauce for less sodium, or add a pinch of red pepper flakes for a touch of heat.
