Ginger Soy Beef and Broccoli Noodles

  1. Cook spaghetti or preferred noodles according to package directions until al dente. Drain and set aside.
  2. While noodles cook, heat the avocado oil in a large skillet or wok over medium-high heat. Add the ground beef and yellow onion, cook until the beef is browned and onion is softened, breaking up the beef with a spoon. Drain any excess grease.
  3. Stir in the grated fresh ginger and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together the beef broth, soy sauce, honey, and rice vinegar. Pour the sauce over the ground beef mixture.
  5. Add the broccoli florets to the skillet. Bring to a simmer, cover, and cook for 5-7 minutes, or until the broccoli is tender-crisp.
  6. Add the drained noodles to the skillet with the beef and broccoli. Toss well to coat everything in the sauce. Season with black pepper and red pepper flakes if desired.
  7. Serve hot. This dish is excellent for meal prep and reheating.

Notes

If fresh ginger is unavailable, 1 teaspoon of dried ground ginger can be used instead. This dish reheats well in the microwave.
