Ingredients
- 1.5 pound ground beef (lean)
- 1 tablespoon avocado oil
- 1 yellow onion (medium, chopped)
- 1 tablespoon fresh ginger (grated)
- 0.5 cup beef broth
- 0.25 cup soy sauce
- 2 tablespoon honey
- 1 tablespoon rice vinegar
- 8 ounce spaghetti
- 4 cup broccoli florets
- 0.5 teaspoon black pepper
- 0.25 teaspoon red pepper flakes
Instructions
- Cook spaghetti or preferred noodles according to package directions until al dente. Drain and set aside.
- While noodles cook, heat the avocado oil in a large skillet or wok over medium-high heat. Add the ground beef and yellow onion, cook until the beef is browned and onion is softened, breaking up the beef with a spoon. Drain any excess grease.
- Stir in the grated fresh ginger and cook for 1 minute until fragrant.
- In a small bowl, whisk together the beef broth, soy sauce, honey, and rice vinegar. Pour the sauce over the ground beef mixture.
- Add the broccoli florets to the skillet. Bring to a simmer, cover, and cook for 5-7 minutes, or until the broccoli is tender-crisp.
- Add the drained noodles to the skillet with the beef and broccoli. Toss well to coat everything in the sauce. Season with black pepper and red pepper flakes if desired.
- Serve hot. This dish is excellent for meal prep and reheating.
Notes
If fresh ginger is unavailable, 1 teaspoon of dried ground ginger can be used instead. This dish reheats well in the microwave.
