Ginger Shiitake and Tofu Noodle Stew

  1. Heat 1 tablespoon toasted sesame oil in a large pot over medium heat. Add 8 ounces sliced shiitake mushrooms and sauté for 4 minutes until softened and lightly browned.
  2. Add 2 tablespoons grated ginger and 4 minced garlic cloves; cook for 1 minute until fragrant.
  3. Pour in 8 cups vegetable broth and 3 tablespoons low-sodium soy sauce. Bring to a rolling boil over high heat.
  4. Add 8 ounces dried soba noodles and 16 ounces cubed extra-firm tofu. Cook at a gentle boil for 4 minutes.
  5. Add 2 quartered heads of baby bok choy and cook for 2 minutes until tender-crisp.
  6. Turn off the heat. Ladle 1/2 cup of warm broth into a small bowl, whisk in 1/4 cup white miso paste until smooth, and stir the dissolved miso back into the pot.
  7. Garnish with 4 sliced green onions before packing into lunch containers.

Notes

If packing ahead, soba noodles will absorb broth over time; pack noodles separately or add a splash of water when reheating.
