Ingredients
- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 1 tablespoon fresh ginger (grated)
- 2 clove garlic (minced)
- 8 ounce green beans (trimmed and halved)
- 16 ounce cauliflower rice
- 0.25 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 0.5 teaspoon sriracha
- 1 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
- 1 tablespoon sesame seeds
Instructions
- In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, and Sriracha (if using) to make the sauce. Set aside.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the diced yellow onion and cook for 2 minutes. Add the chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Season with salt and black pepper.
- Add the grated fresh ginger, minced garlic, green beans, and frozen cauliflower rice to the skillet. Cook for 5-7 minutes, stirring frequently, until green beans are tender-crisp and cauliflower rice is heated through. Create a space in the center of the pan and pour in the prepared sauce, stirring to coat all ingredients well. Cook for 1-2 minutes until the sauce slightly thickens.
- Remove from heat. Garnish with sesame seeds, if desired, and serve immediately.
Notes
Using frozen cauliflower rice speeds up prep significantly. Ensure green beans are tender-crisp, not soggy.
