  1. In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, and Sriracha (if using) to make the sauce. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the diced yellow onion and cook for 2 minutes. Add the chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Season with salt and black pepper.
  3. Add the grated fresh ginger, minced garlic, green beans, and frozen cauliflower rice to the skillet. Cook for 5-7 minutes, stirring frequently, until green beans are tender-crisp and cauliflower rice is heated through. Create a space in the center of the pan and pour in the prepared sauce, stirring to coat all ingredients well. Cook for 1-2 minutes until the sauce slightly thickens.
  4. Remove from heat. Garnish with sesame seeds, if desired, and serve immediately.

Notes

Using frozen cauliflower rice speeds up prep significantly. Ensure green beans are tender-crisp, not soggy.
