  1. Cook ramen noodles according to package directions. Drain well and set aside.
  2. While noodles cook, prepare the sauce: In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, grated fresh ginger, minced garlic, and red pepper flakes (if using). Set aside.
  3. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  4. Add thinly sliced red bell pepper to the skillet and stir-fry for 2-3 minutes until tender-crisp. Add fresh spinach and cook until wilted, about 1-2 minutes.
  5. Add the cooked ramen noodles, cooked ground beef, and the ginger-sesame sauce to the skillet. Toss everything together to coat evenly. Cook for 1-2 minutes to heat through.
  6. Steam frozen shelled edamame: Place in a microwave-safe bowl with a splash of water, cover, and microwave for 2-3 minutes, or steam on the stovetop.
  7. Serve the ginger-sesame beef noodle stir-fry immediately, with steamed edamame on the side.
