Ginger Scallion Turkey Stir-Fry

  1. In a small bowl, whisk together the gluten-free low-sodium tamari, rice vinegar, toasted sesame oil, grated fresh ginger, and salt to form the sauce.
  2. Heat 1/2 tablespoon of the garlic-infused olive oil in a large nonstick skillet or wok over medium-high heat. Add the sliced turkey breast strips and sear without moving for 2 minutes, then stir-fry for 3 to 4 minutes until cooked through and opaque to the center (165°F on an instant-read thermometer). Transfer turkey to a clean plate.
  3. Add the remaining 1/2 tablespoon of garlic-infused olive oil to the hot skillet. Add the sliced carrots and stir-fry for 3 minutes until crisp-tender.
  4. Add the chopped baby bok choy and stir-fry for 2 minutes until the greens are just wilted and the stems remain crisp.
  5. Return the cooked turkey to the pan, pour the prepared sauce over the mixture, and toss continuously for 1 minute until everything is evenly coated and piping hot. Remove from heat, fold in the sliced green onion tops, and serve.

Notes

Low-FODMAP guidelines allow green onion tops (scallion greens) and garlic-infused oil while strictly avoiding onion bulbs and whole garlic cloves.
