Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 1 red bell pepper (large, thinly sliced)
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.25 cup chicken broth
- 2 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 2 package instant ramen noodles (discard seasoning packets)
- 0.25 cup scallions (chopped)
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set turkey aside.
- Add the thinly sliced red bell pepper to the same skillet and stir-fry for 2-3 minutes until slightly tender-crisp.
- Stir in the minced garlic and grated fresh ginger and cook for 1 minute until fragrant.
- Return the cooked turkey to the skillet. In a small bowl, whisk together the chicken broth, soy sauce, rice vinegar, and sesame oil. Pour the sauce over the turkey and vegetables, stirring to coat. Bring to a simmer.
- While the sauce simmers, cook the instant ramen noodles according to package directions, typically by boiling for 2-3 minutes. Drain well.
- Add the drained noodles to the skillet with the turkey and sauce, tossing to combine. Cook for 1-2 minutes until heated through.
- Serve immediately, garnished with chopped scallions if desired.
Notes
Ensure all ingredients are prepped before you start cooking, as stir-fries cook quickly. You can add other quick-cooking vegetables like shredded carrots or snap peas.
