Instructions

  1. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set turkey aside.
  2. Add the thinly sliced red bell pepper to the same skillet and stir-fry for 2-3 minutes until slightly tender-crisp.
  3. Stir in the minced garlic and grated fresh ginger and cook for 1 minute until fragrant.
  4. Return the cooked turkey to the skillet. In a small bowl, whisk together the chicken broth, soy sauce, rice vinegar, and sesame oil. Pour the sauce over the turkey and vegetables, stirring to coat. Bring to a simmer.
  5. While the sauce simmers, cook the instant ramen noodles according to package directions, typically by boiling for 2-3 minutes. Drain well.
  6. Add the drained noodles to the skillet with the turkey and sauce, tossing to combine. Cook for 1-2 minutes until heated through.
  7. Serve immediately, garnished with chopped scallions if desired.

Notes

Ensure all ingredients are prepped before you start cooking, as stir-fries cook quickly. You can add other quick-cooking vegetables like shredded carrots or snap peas.
