Ingredients
- 1.5 pound pork tenderloin (thinly sliced)
- 2 tablespoon vegetable oil

- 1 head green cabbage (cored, thinly sliced)

- 1 pound stir-fry noodles (quick-cooking)

Instructions
- Prepare the stir-fry noodles according to package directions, usually boiling for 2-3 minutes. Drain and rinse with cold water to prevent sticking. Set aside.
- In a small bowl, whisk together the chicken broth, soy sauce, rice vinegar, brown sugar, and cornstarch until smooth. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced pork tenderloin and cook for 3-5 minutes, stirring frequently, until browned and cooked through. Remove pork from skillet and set aside.
- Add the grated fresh ginger and minced garlic to the skillet and stir-fry for 30 seconds until fragrant.
- Add the thinly sliced green cabbage and julienned carrots to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Return the cooked pork to the skillet. Pour in the prepared sauce and cook for 1-2 minutes, stirring constantly, until the sauce thickens. Add the drained noodles and toss to combine and coat thoroughly.
- Season with 1/2 teaspoon black pepper and serve hot.
Notes
Ensure your pork is very thinly sliced for quick cooking. Partially freezing the tenderloin for 15-20 minutes can make it easier to slice thinly. Adjust soy sauce or add a splash of water for desired saltiness.
