Ingredients
- 0.5 pound pork tenderloin (trimmed, sliced into 1/2-inch medallions)
- 1 tablespoon toasted sesame oil
- 4 cup baby bok choy (chopped)
- 1 tablespoon fresh ginger (peeled, minced)
- 2 tablespoon coconut aminos
- 2 tablespoon chia seeds
- 2 tablespoon hemp hearts (shelled)
- 0.5 teaspoon salt
- 0.25 teaspoon crushed red pepper flakes
Instructions
- Season sliced pork tenderloin medallions with 1/4 teaspoon of the salt.
- Heat 1/2 tablespoon toasted sesame oil in a large skillet over high heat. Sear pork medallions for 2 to 3 minutes per side until golden brown and cooked to an internal temperature of 145 degrees F. Transfer to a plate to rest.
- Add the remaining 1/2 tablespoon toasted sesame oil to the skillet along with 1 tablespoon minced fresh ginger and 1/4 teaspoon crushed red pepper flakes. Sauté for 30 seconds until aromatic.
- Add 4 cups chopped baby bok choy and 2 tablespoons coconut aminos. Stir-fry for 3 minutes until stems are crisp-tender and greens wilt.
- Remove skillet from heat. Stir in 2 tablespoons chia seeds, 2 tablespoons hemp hearts, and the remaining 1/4 teaspoon salt.
- Divide warm bok choy onto plates and arrange ginger-glazed pork tenderloin medallions over the top.
