- 1 pound Pacific cod fillets (cut into 2 equal portions, patted dry)
- 1 tablespoon garlic infused olive oil
- 1 tablespoon gluten free tamari (reduced-sodium)
- 1 tablespoon fresh ginger (grated)
- 1 teaspoon toasted sesame oil
- 0.25 teaspoon salt
- 4 cup baby bok choy (halved lengthwise)
- 1 cup baby carrots (thinly sliced lengthwise)
- 2 tablespoon scallion greens (green tops only, sliced)
Instructions
- In a small dish, whisk together the tamari, grated ginger, toasted sesame oil, and 2 tablespoons of water.
- Season the cod fillets lightly on both sides with the salt.
- Heat garlic-infused olive oil in a wide non-stick skillet over medium-high heat for 1 minute.
- Place cod fillets in the skillet and sear for 3 to 4 minutes without moving until a light golden crust forms, then carefully flip.
- Arrange the baby bok choy and sliced baby carrots around the fish in the skillet. Pour the ginger-tamari mixture over the vegetables and fish.
- Cover tightly and steam over medium heat for 4 to 5 minutes until the cod flakes easily with a fork and reaches 145°F, and the vegetables are crisp-tender.
- Garnish with scallion greens, plate one portion for dinner, and store the second portion in an airtight container for Saturday.

Cod reheats gently in the microwave at 50% power for 2 minutes to preserve its delicate, flaky texture.
