Instructions

  1. First, prepare your basmati rice. Rinse 1 1/2 cups basmati rice thoroughly under cold water. Combine rice with 2 1/4 cups water and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While the rice cooks, prepare the stir-fry sauce. In a small bowl, whisk together 1/2 cup chicken broth, 1/4 cup soy sauce, 1 tablespoon honey, 1 teaspoon toasted sesame oil, and 1 teaspoon cornstarch until smooth. Set aside.
  3. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  4. Add 1 thinly sliced yellow onion and 1 thinly sliced red bell pepper to the skillet. Stir-fry for 3-4 minutes until vegetables are crisp-tender. Stir in 2 minced garlic cloves and 1 tablespoon grated fresh ginger and cook for 1 minute more until fragrant.
  5. Pour the prepared stir-fry sauce into the skillet with the turkey and vegetables. Cook, stirring constantly, until the sauce thickens and coats all ingredients, about 1-2 minutes.
  6. In a separate pot, steam 3 cups fresh broccoli florets for 5-7 minutes, until tender-crisp.
  7. Serve the Ginger-Garlic Turkey Stir-Fry immediately over the cooked basmati rice, with the steamed broccoli on the side. Season with salt and black pepper to taste, if desired.
