  1. Start by cooking the white rice according to package directions (typically 1 part rice to 2 parts water) or in a rice cooker. Fluff with a fork when done and set aside.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set turkey aside.
  3. Add chopped yellow onion to the skillet and sauté for 2-3 minutes until softened. Stir in minced garlic and grated fresh ginger, cooking for another 1 minute until fragrant.
  4. Add the thinly sliced green cabbage to the skillet and stir-fry for 3-5 minutes, until tender-crisp. You may need to add a splash of water if it starts to stick.
  5. Return the cooked ground turkey to the skillet. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sriracha (if using). Pour the sauce over the turkey and vegetables, tossing to coat. Cook for 1-2 minutes until the sauce has slightly thickened.
  6. Serve the stir-fry immediately over the cooked white rice. Garnish with sliced green onions, if desired.

Notes

This stir-fry reheats wonderfully and can be made in advance for quick lunches throughout the week. For extra crunch, top with roasted peanuts or cashews if you like nuts.
