- 1 tablespoon olive oil
- 1 head broccoli (cut into small florets)
- 1 red bell pepper (thinly sliced)
- 3 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.25 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 0.5 teaspoon sriracha
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 green onions (sliced, for garnish)
Instructions
- In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, toasted sesame oil, sriracha, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat for 1 minute. Add Impossible Steak Bites and cook, stirring occasionally, until lightly browned, about 4-5 minutes. Remove from skillet and set aside.
- Add broccoli florets and thinly sliced red bell pepper to the same skillet. Sauté for 3-4 minutes until vegetables are crisp-tender. Add minced garlic and grated fresh ginger and cook for another 1 minute until fragrant.
- Return the cooked Impossible Steak Bites to the skillet with the vegetables. Pour the prepared sauce over everything and stir to coat. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened slightly.
- Serve hot, garnished with sliced green onions, if desired.
