  1. In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, toasted sesame oil, sriracha, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat for 1 minute. Add Impossible Steak Bites and cook, stirring occasionally, until lightly browned, about 4-5 minutes. Remove from skillet and set aside.
  3. Add broccoli florets and thinly sliced red bell pepper to the same skillet. Sauté for 3-4 minutes until vegetables are crisp-tender. Add minced garlic and grated fresh ginger and cook for another 1 minute until fragrant.
  4. Return the cooked Impossible Steak Bites to the skillet with the vegetables. Pour the prepared sauce over everything and stir to coat. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened slightly.
