Ginger Garlic Chicken Stir-Fry

  1. In a small bowl, whisk together 1 tablespoon soy sauce, rice vinegar, and cornstarch. Add the chicken pieces and toss to coat. Marinate for 5-10 minutes while you prep other ingredients.
  2. Prepare the white rice according to package directions, aiming for it to be ready around the same time as the stir-fry.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook for 4-5 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  4. Add minced fresh ginger and minced garlic to the same skillet and stir-fry for 30 seconds until fragrant.
  5. Add chicken broth and sugar to the skillet, scraping up any browned bits from the bottom. Bring to a simmer. Add the mixed frozen vegetables and cook for 2-3 minutes until heated through.
  6. Return the cooked chicken to the skillet and toss everything together to coat with the sauce. Cook for 1 minute more until sauce has slightly thickened.
  7. Serve immediately over cooked white rice, garnished with chopped green onions, if desired.

Notes

Adjust soy sauce and sugar to your taste preference. For a spicier kick, add a dash of red pepper flakes with the ginger and garlic.
