  1. Cook the jasmine rice: Combine 1 cup uncooked jasmine rice and 2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. Prepare chicken: While the rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound chicken breast pieces and cook until lightly browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Sauté vegetables: Add 2 minced garlic cloves, 1 grated inch of fresh ginger, 1 sliced red bell pepper, and 1 head broccoli florets to the same skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  4. Make the sauce: In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon cornstarch, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, and 1/4 cup water.
  5. Combine and serve: Pour the sauce into the skillet with the vegetables and stir constantly until the sauce thickens, about 1-2 minutes. Return the cooked chicken to the skillet and toss to coat. Serve immediately over the cooked jasmine rice.

Notes

For extra crunch, sprinkle with sesame seeds before serving. You can also add other quick-cooking vegetables like snap peas or shredded carrots.
