- 1 pound baby bok choy (halved lengthwise)
- 1 teaspoon toasted sesame oil
- 0.25 cup fresh cilantro (fresh leaves)
Instructions
- Cook the rice vermicelli noodles in boiling water for 3 to 4 minutes according to package directions until tender, then drain, rinse with cold water, and divide evenly among 4 large serving bowls.
- In a large soup pot, combine 6 cups of water, gluten-free tamari, fish sauce, grated fresh ginger, sliced garlic, and white parts of the scallions.
- Bring the broth to a gentle boil over medium-high heat, then reduce heat to medium-low and simmer uncovered for 8 minutes to infuse flavors.
- Add the baby bok choy and shrimp to the simmering broth and cook for 3 to 4 minutes, until the shrimp turn pink and opaque and the bok choy is tender-crisp.
- Turn off the heat, stir in the toasted sesame oil and green scallion tops, ladle the hot broth, bok choy, and shrimp over the prepared noodles, and top with fresh cilantro.
Notes
Rinsing the cooked rice noodles in cool water prevents them from becoming mushy before the hot broth is ladled over them.
