Ingredients
- 1 tablespoon olive oil
- 1 pound beef sirloin (thinly sliced against the grain)
- 1 yellow onion (medium, sliced)
- 1 red bell pepper (thinly sliced)
- 2 clove garlic (minced)
- 1 fresh ginger (1 inch, grated)
- 2 tablespoon coconut aminos
- 1 tablespoon apple cider vinegar
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 green cabbage (medium head, cored, roughly chopped)
- 2 plantains (ripe, peeled, sliced 1/2-inch thick)
- 2 tablespoon coconut oil
Instructions
- In a small bowl, whisk together the coconut aminos and apple cider vinegar. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet or wok over high heat. Add the thinly sliced beef sirloin and stir-fry for 3-4 minutes, or until browned. Remove beef from the skillet and set aside.
- Add the yellow onion and red bell pepper to the skillet. Stir-fry for 3 minutes until slightly tender-crisp. Add the minced garlic and grated fresh ginger, stir-fry for 1 minute until fragrant.
- Return the beef to the skillet. Pour in the coconut aminos mixture, stirring to coat. Season with salt and black pepper. Cook for 1-2 minutes until sauce has slightly reduced.
- While the stir-fry cooks, steam the chopped green cabbage. Place it in a steamer basket over boiling water and cook for 5-7 minutes, until tender-crisp. Alternatively, microwave with a splash of water in a covered dish for 3-5 minutes.
- In a separate pan, heat 2 tablespoons of coconut oil over medium-high heat. Add the sliced plantains and fry for 3-4 minutes per side, until golden brown and caramelized.
- Serve the ginger beef stir-fry immediately with steamed cabbage and fried plantains.
Notes
For even cooking, do not overcrowd the pan when stir-frying the beef. Cook in batches if necessary.
