  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add finely chopped yellow onion and cook for 5 minutes until softened. Stir in minced garlic, ground cumin, dried coriander, smoked paprika, and red pepper flakes (if using) and cook for 1 minute until fragrant.
  2. Add rinsed red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until lentils are tender.
  3. Stir in finely ground walnuts, chopped fresh cilantro, and red wine vinegar. Season with salt and black pepper to taste. Cook for another 2-3 minutes to allow flavors to meld.
