Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add finely chopped yellow onion and cook for 5 minutes until softened. Stir in minced garlic, ground cumin, dried coriander, smoked paprika, and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Add rinsed red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until lentils are tender.
- Stir in finely ground walnuts, chopped fresh cilantro, and red wine vinegar. Season with salt and black pepper to taste. Cook for another 2-3 minutes to allow flavors to meld.
- Ladle the hot stew into bowls and serve immediately with crusty bread for dipping.
