  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the 1/2 medium yellow onion and cook until softened, about 3 minutes. Stir in the 2 cloves minced garlic and cook for 1 minute more.
  2. Add the 5 ounces of fresh spinach to the skillet, stirring until wilted, about 2-3 minutes. Stir in the 1 can of diced tomatoes, 1/2 teaspoon ground cumin, 1/4 teaspoon smoked paprika, and pinch of red pepper flakes (if using). Season with salt and black pepper to taste. Bring to a gentle simmer and cook for 3 minutes to allow flavors to combine.
  3. Create four small wells in the tomato-spinach mixture. Crack 4 large eggs into each well. Cover the skillet and cook for 4-6 minutes, or until the egg whites are set and the yolks are still runny (or to your desired doneness).
  4. Remove from heat, sprinkle with 1/4 cup crumbled feta cheese. Serve immediately with 2 slices of toasted crusty bread for dipping.

Notes

Feel free to add other herbs like fresh parsley or dill for an extra layer of flavor. Adjust red pepper flakes for desired heat.
