- 1 pound shrimp (large, peeled and deveined)
- 1 tablespoon olive oil (divided)
- 3 clove garlic (minced)
- 1 teaspoon smoked paprika
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 5 ounce baby spinach
- 2 tablespoon fresh parsley (chopped)
- 2 tablespoon fresh mint (chopped)
- 1 tablespoon lemon juice (fresh)
Instructions
- Pat the shrimp dry with paper towels. In a medium bowl, toss shrimp with 1/2 teaspoon olive oil, 1 minced clove garlic, smoked paprika, red pepper flakes, salt, and black pepper.
- Heat 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and cooked through. Do not overcrowd the pan; cook in batches if necessary. Remove shrimp and set aside.
- Add the remaining 1/2 tablespoon olive oil to the same skillet, along with the remaining 2 minced cloves garlic. Sauté for 30 seconds until fragrant.
- Add the baby spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes.
- Return the cooked shrimp to the skillet with the spinach. Stir in chopped fresh parsley, fresh mint, and fresh lemon juice. Toss to combine.
- Serve immediately.
Notes
Do not overcook shrimp, as it can become tough. Ensure spinach is added to a hot pan to wilt quickly.
