- 3 ounce whole wheat spaghetti
- 4 ounce shrimp (large, peeled and deveined)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 clove garlic (minced)
- 0.25 teaspoon red pepper flakes
- 0.25 cup chicken broth
- 1 tablespoon lemon juice
- 0.25 cup fresh parsley (chopped)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon Parmesan cheese (grated)
- 1 package Caesar salad kit (individual)
Instructions
- Bring a small pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package directions until al dente, about 8-10 minutes. Drain well.
- While the pasta cooks, heat the olive oil and butter in a large skillet over medium heat. Add the shrimp and cook for 1-2 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
- To the same skillet, add the minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
- Return the cooked shrimp to the skillet. Add the drained spaghetti and chopped fresh parsley. Toss everything together until the pasta is well-coated with the sauce.
- Season with salt and black pepper to taste. Serve immediately, topped with grated Parmesan cheese if desired, and enjoy with the prepared Caesar salad.
