Ingredients
- 6 ounce linguine pasta
- 1 tablespoon olive oil
- 0.5 cup yellow onion (finely chopped)
- 3 clove garlic (minced)
- 1 can diced tomatoes (undrained)
- 0.25 cup vegetable broth
- 0.5 teaspoon dried basil
- 0.25 teaspoon dried oregano
- 0.5 pound raw shrimp (peeled, deveined)
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup mixed green salad
- 2 tablespoon Italian dressing
Instructions
- Cook 6 ounces linguine pasta according to package directions in a large pot of salted boiling water. Before draining, reserve 1/2 cup pasta water. Drain pasta and set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1/2 cup finely chopped yellow onion and cook for 3-4 minutes until softened. Add 3 cloves minced garlic and cook for 1 minute more until fragrant.
- Stir in 1 can diced tomatoes, 1/4 cup vegetable broth, 1/2 teaspoon dried basil, and 1/4 teaspoon dried oregano. Bring to a simmer, then reduce heat to low and cook for 10-12 minutes, allowing the flavors to meld. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Add 1/2 pound peeled and deveined raw shrimp to the simmering sauce and cook for 3-5 minutes, or until the shrimp turn pink and are cooked through. If the sauce is too thick, stir in a few tablespoons of the reserved pasta water.
- Add the cooked linguine pasta to the skillet with the shrimp and marinara sauce. Toss gently to combine. Taste and adjust seasoning as needed.
- Serve the garlicky shrimp marinara immediately, with a side of 2 cups mixed green salad tossed with 2 tablespoons Italian dressing.
Notes
You can add a pinch of red pepper flakes to the sauce for a bit of heat, if desired.
