Instructions

  1. Cook 6 ounces linguine pasta according to package directions in a large pot of salted boiling water. Before draining, reserve 1/2 cup pasta water. Drain pasta and set aside.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1/2 cup finely chopped yellow onion and cook for 3-4 minutes until softened. Add 3 cloves minced garlic and cook for 1 minute more until fragrant.
  3. Stir in 1 can diced tomatoes, 1/4 cup vegetable broth, 1/2 teaspoon dried basil, and 1/4 teaspoon dried oregano. Bring to a simmer, then reduce heat to low and cook for 10-12 minutes, allowing the flavors to meld. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  4. Add 1/2 pound peeled and deveined raw shrimp to the simmering sauce and cook for 3-5 minutes, or until the shrimp turn pink and are cooked through. If the sauce is too thick, stir in a few tablespoons of the reserved pasta water.
  5. Add the cooked linguine pasta to the skillet with the shrimp and marinara sauce. Toss gently to combine. Taste and adjust seasoning as needed.
  6. Serve the garlicky shrimp marinara immediately, with a side of 2 cups mixed green salad tossed with 2 tablespoons Italian dressing.

Notes

You can add a pinch of red pepper flakes to the sauce for a bit of heat, if desired.
