  1. Place glass noodles in a large bowl and cover with hot tap water. Let soak for 5-7 minutes, until softened. Drain thoroughly and use kitchen shears to cut the noodles into shorter lengths for easier eating.
  2. Meanwhile, heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add minced garlic and grated ginger to the same skillet. Sauté for 30 seconds until fragrant.
  4. Add carrots, shredded green cabbage, and sliced mushrooms to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Return shrimp to the skillet. Add the drained glass noodles, soy sauce, sesame oil, and brown sugar. Toss everything together vigorously for 2-3 minutes until well combined and heated through.
  6. Serve immediately, garnished with sliced green onions if desired.

Notes

Don't overcook the shrimp, they cook very quickly! For extra crunch, a sprinkle of toasted sesame seeds before serving would be a great addition.
