Ingredients
- 6 ounce glass noodles
- 1 tablespoon olive oil
- 1 pound shrimp (large, peeled and deveined)
- 4 clove garlic (minced)
- 1 fresh ginger (inch, grated)
- 1 cup carrots (sliced)
- 2 cup green cabbage (shredded)
- 0.5 cup mushrooms (sliced)
- 3 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon brown sugar
- 2 green onions (sliced, for garnish)
Instructions
- Place glass noodles in a large bowl and cover with hot tap water. Let soak for 5-7 minutes, until softened. Drain thoroughly and use kitchen shears to cut the noodles into shorter lengths for easier eating.
- Meanwhile, heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
- Add minced garlic and grated ginger to the same skillet. Sauté for 30 seconds until fragrant.
- Add carrots, shredded green cabbage, and sliced mushrooms to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return shrimp to the skillet. Add the drained glass noodles, soy sauce, sesame oil, and brown sugar. Toss everything together vigorously for 2-3 minutes until well combined and heated through.
- Serve immediately, garnished with sliced green onions if desired.
Notes
Don't overcook the shrimp, they cook very quickly! For extra crunch, a sprinkle of toasted sesame seeds before serving would be a great addition.
