Ingredients

- 0.5 head cauliflower (riced)

Instructions
- Prepare the cauliflower rice by grating half a head of cauliflower using a box grater or pulsing in a food processor until it resembles rice grains. Steam or microwave until tender, about 3-5 minutes, then set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season with black pepper.
- Serve the garlicky shrimp and greens alongside the cauliflower rice, with a lemon wedge for squeezing.
Notes
For even quicker preparation, you can use pre-riced cauliflower or frozen riced cauliflower.
