Garlicky Orange Pork Stir-Fry

  1. In a bowl, toss the thinly sliced pork loin with 1 tablespoon of tamari and cornstarch. Set aside to marinate for at least 10 minutes.
  2. In a separate small bowl, whisk together the fresh orange juice, rice vinegar, remaining 1 tablespoon of tamari, sesame oil, and honey for the sauce. Set aside.
  3. Cook the jasmine rice according to package directions while preparing the stir-fry. Also, steam the fresh broccoli florets until tender-crisp.
  4. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove the pork from the skillet and set aside.
  5. Add the remaining 1 tablespoon of olive oil to the skillet. Add the thinly sliced red bell pepper, julienned carrot, and thinly sliced yellow onion. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  6. Add the minced garlic and grated fresh ginger to the vegetables and stir-fry for 1 minute until fragrant.
  7. Pour the prepared orange sauce into the skillet and bring to a simmer. Cook for 1-2 minutes until the sauce slightly thickens. Return the cooked pork to the skillet and toss to coat.
  8. Serve the garlicky orange pork stir-fry immediately over jasmine rice, with steamed broccoli on the side.

Notes

Use fresh orange juice for the best flavor. For meal prep, you can prepare the sauce and chop vegetables ahead of time.
