  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken thigh pieces and cook for 5-7 minutes, stirring occasionally, until browned and mostly cooked through. Remove chicken from the skillet and set aside.
  2. Add the remaining 1 tablespoon olive oil to the skillet. Add diced yellow onion, diced poblano peppers, and diced Russet potatoes. Cook, stirring occasionally, for 10-12 minutes, or until potatoes are tender and lightly browned.
  3. Stir in minced garlic, dried oregano, cumin, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Return chicken to the skillet. Pour in chicken broth and lime juice. Stir well and cook for 2-3 minutes, allowing the sauce to reduce slightly and flavors to combine.
  5. While hash finishes, warm the corn tortillas according to package directions (microwave, oven, or skillet).
  6. Serve the chicken and poblano hash immediately with warm corn tortillas.

Notes

Chicken thighs are used here for extra flavor and moisture, but chicken breast can be substituted if preferred. Make sure potatoes are diced uniformly for even cooking.
