  1. Cook jasmine rice according to package directions.
  2. While rice cooks, prepare the sauce: In a small bowl, whisk together low-sodium soy sauce, vegetable broth, cornstarch, and brown sugar until smooth. Set aside.
  3. Heat sesame oil in a large skillet or wok over medium-high heat. Add the seitan pieces and cook for 3-5 minutes until lightly browned. Remove seitan from the skillet and set aside.
  4. Add broccoli florets and thinly sliced red bell pepper to the same skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add a splash of water if needed to help steam the broccoli.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Return the seitan to the skillet. Pour in the prepared sauce, stirring constantly, until the sauce thickens and coats the seitan and vegetables, about 1-2 minutes.
  7. Serve the Garlic Soy Seitan Stir-Fry immediately over cooked jasmine rice. Garnish with thinly sliced green onions, if desired.

Notes

This stir-fry reheats very well. For best results when reheating, you can add a tablespoon of water or broth to keep the sauce from getting too thick.
