  1. First, prepare the white rice. In a small saucepan, combine 1/2 cup long grain white rice, 1 cup water, and 1/4 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Keep covered off the heat.
  2. While rice cooks, prepare the avocado salad. In a small bowl, combine 1/2 diced avocado and 1/4 cup halved cherry tomatoes. Lightly season with salt, pepper, and a squeeze of lime juice if desired.
  3. Heat 1/2 tablespoon olive oil in a medium skillet over medium-high heat. Add 1/4 pound shrimp and cook for 1 minute per side, until pink and just cooked through. Do not overcrowd the pan; cook in batches if necessary.
  4. Add 3 minced garlic cloves to the skillet and cook for 30 seconds until fragrant, stirring constantly. Be careful not to burn the garlic.
  5. Remove skillet from heat. Stir in 1 tablespoon fresh lime juice, 1 tablespoon chopped fresh cilantro, and 1/8 teaspoon black pepper. Toss to coat the shrimp.
  6. Serve the garlic shrimp immediately with the cooked white rice and avocado salad.

Notes

For best texture, serve the shrimp immediately after cooking. The avocado salad is also best enjoyed fresh.
