Ingredients
- 2 pound shrimp (large, peeled, deveined, tails on or off)
- 6 clove garlic (minced)
- 5 tablespoon olive oil (for dressing)
- 1.5 teaspoon kosher salt (for dressing)
- 0.5 teaspoon black pepper
- 4 tablespoon fresh lime juice (for dressing)
- 2 can black beans (rinsed and drained)
- 2 cup frozen corn (thawed)
- 0.5 cup fresh cilantro (chopped)
- 0.25 cup red onion (finely diced)
- 1 package plantain chips
Instructions
- Prepare the black bean and corn salad: In a large bowl, combine rinsed and drained black beans, thawed frozen corn, chopped fresh cilantro, and finely diced red onion.
- Whisk together 2 tablespoons olive oil, 2 tablespoons fresh lime juice, and 1/2 teaspoon kosher salt. Pour over the salad and toss to combine. Set aside.
- Pat shrimp dry with paper towels. In a medium bowl, toss shrimp with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
- Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.
- Add seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- Remove skillet from heat and immediately stir in 2 tablespoons fresh lime juice with the shrimp.
- Serve garlic shrimp immediately with generous portions of the black bean and corn salad and a side of plantain chips.
Notes
To ensure crispy shrimp, do not overcrowd the pan. Cook in two batches if your skillet is not large enough.
