  1. Prepare the black bean and corn salad: In a large bowl, combine rinsed and drained black beans, thawed frozen corn, chopped fresh cilantro, and finely diced red onion.
  2. Whisk together 2 tablespoons olive oil, 2 tablespoons fresh lime juice, and 1/2 teaspoon kosher salt. Pour over the salad and toss to combine. Set aside.
  3. Pat shrimp dry with paper towels. In a medium bowl, toss shrimp with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
  4. Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  6. Remove skillet from heat and immediately stir in 2 tablespoons fresh lime juice with the shrimp.
  7. Serve garlic shrimp immediately with generous portions of the black bean and corn salad and a side of plantain chips.

Notes

To ensure crispy shrimp, do not overcrowd the pan. Cook in two batches if your skillet is not large enough.
