  1. Pat the shrimp dry with paper towels. In a large bowl, toss the shrimp with 1 tablespoon of olive oil, 1 1/2 tablespoons of fajita seasoning, and the juice from 1 lime. Set aside.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced green bell pepper, red bell pepper, and yellow onion. Sauté for 4-5 minutes until softened but still tender-crisp.
  3. Add the minced garlic and the remaining 1 1/2 tablespoons of fajita seasoning to the vegetables. Cook for 1 minute more, stirring constantly, until fragrant.
  4. Add the seasoned shrimp to the skillet with the vegetables. Cook for 3-5 minutes, stirring frequently, until the shrimp turn pink and are cooked through. Be careful not to overcook.
  5. Warm the flour tortillas according to package directions (microwave, oven, or skillet).
  6. Serve the sizzling shrimp and vegetable mixture immediately with warm flour tortillas, lime wedges, and chopped fresh cilantro for garnish.

Notes

Ensure your skillet is very hot before adding the vegetables and shrimp to achieve a nice sizzle and quick cook time. Frozen shrimp can be used; just ensure they are fully thawed and patted dry.
