Ingredients
- 2 pound Yukon Gold potatoes (scrubbed and diced into 1/2-inch pieces)
- 3 tablespoon olive oil
- 1 yellow onion (large, diced)
- 4 clove garlic (minced)
- 1 tablespoon smoked paprika
- 0.5 teaspoon red pepper flakes
- 1.5 pound shrimp (large, peeled and deveined)
- 10 ounce green peas (frozen, thawed)
- 0.5 cup chicken broth
- 2 tablespoon fresh parsley (chopped)
- 1.5 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add the diced Yukon Gold potatoes and 1 teaspoon of salt. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 10-12 minutes.
- Push the potatoes to one side of the skillet. Add the remaining 1 tablespoon of olive oil to the empty side, then add the yellow onion, minced garlic, smoked paprika, and red pepper flakes. Sauté for 3-4 minutes until the onion is softened and fragrant.
- Stir the cooked potatoes with the onion mixture. Add the peeled and deveined shrimp and 1/2 teaspoon of salt. Cook for 2-3 minutes until the shrimp begin to turn pink.
- Pour in the chicken broth and add the thawed green peas. Bring to a simmer and cook for 2 minutes, until the shrimp are fully cooked and the peas are heated through. Season with black pepper.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
If you prefer more spice, increase the red pepper flakes. The potatoes absorb flavor beautifully.
