  1. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add the diced Yukon Gold potatoes and 1 teaspoon of salt. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 10-12 minutes.
  2. Push the potatoes to one side of the skillet. Add the remaining 1 tablespoon of olive oil to the empty side, then add the yellow onion, minced garlic, smoked paprika, and red pepper flakes. Sauté for 3-4 minutes until the onion is softened and fragrant.
  3. Stir the cooked potatoes with the onion mixture. Add the peeled and deveined shrimp and 1/2 teaspoon of salt. Cook for 2-3 minutes until the shrimp begin to turn pink.
  4. Pour in the chicken broth and add the thawed green peas. Bring to a simmer and cook for 2 minutes, until the shrimp are fully cooked and the peas are heated through. Season with black pepper.
  5. Garnish with fresh parsley, if desired, and serve immediately.

Notes

If you prefer more spice, increase the red pepper flakes. The potatoes absorb flavor beautifully.
