Instructions

  1. Cook spaghetti according to package directions. Before draining, reserve 1/4 cup of the pasta water.
  2. While pasta cooks, pat shrimp dry. Season shrimp with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  3. Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add shrimp and cook for 1 to 2 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  4. To the same skillet, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.
  5. Stir in chicken broth, lemon juice, and the reserved 1/4 cup pasta water. Bring to a simmer.
  6. Add cooked spaghetti and cooked shrimp to the skillet. Toss to combine, ensuring pasta is coated with the sauce. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste.
  7. For the side salad, combine bagged mixed greens and halved cherry tomatoes in a small bowl. Toss with 2 tablespoons balsamic vinaigrette.
  8. Toast garlic bread according to package directions.
  9. Serve pasta immediately with the side salad and garlic bread. Garnish with chopped fresh parsley, if desired.
