Ingredients
- 2 ounce dry spaghetti
- 4 ounce shrimp (peeled and deveined)
- 1 tablespoon olive oil
- 2 clove garlic (minced)
- 0.25 teaspoon red pepper flakes
- 0.25 cup chicken broth
- 0.5 lemon (juiced)
- 1 tablespoon fresh parsley (chopped)
- 1.5 ounce bagged mixed greens
- 0.25 cup cherry tomatoes (halved)
- 2 tablespoon balsamic vinaigrette
- 1 slice garlic bread
- 0.75 teaspoon salt
- 0.375 teaspoon black pepper
Instructions
- Cook spaghetti according to package directions. Before draining, reserve 1/4 cup of the pasta water.
- While pasta cooks, pat shrimp dry. Season shrimp with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add shrimp and cook for 1 to 2 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
- To the same skillet, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.
- Stir in chicken broth, lemon juice, and the reserved 1/4 cup pasta water. Bring to a simmer.
- Add cooked spaghetti and cooked shrimp to the skillet. Toss to combine, ensuring pasta is coated with the sauce. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste.
- For the side salad, combine bagged mixed greens and halved cherry tomatoes in a small bowl. Toss with 2 tablespoons balsamic vinaigrette.
- Toast garlic bread according to package directions.
- Serve pasta immediately with the side salad and garlic bread. Garnish with chopped fresh parsley, if desired.
