  1. Pat the shrimp dry. In a large skillet or wide pot, heat 1/2 cup olive oil over medium-high heat. Add sliced garlic and red pepper flakes; cook for 1 minute until fragrant, being careful not to burn the garlic.
  2. Add the shrimp to the skillet. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Cook for 2-3 minutes per side, until pink and opaque.
  3. Remove the skillet from heat. Stir in the fresh lemon juice and 1/4 cup chopped fresh parsley. Toss to coat.
  4. While shrimp cooks, prepare the tomato and red onion salad. In a medium bowl, combine sliced Roma tomatoes and thinly sliced red onion. Drizzle with 2 tablespoons olive oil and 1 tablespoon red wine vinegar. Season with a pinch of salt and pepper and toss gently.
  5. Serve the garlic shrimp immediately from the skillet, garnished with additional fresh parsley, if desired. Serve with sliced crusty baguette and the tomato and red onion salad.

Notes

Ensure the skillet is large enough to cook the shrimp in a single layer for even cooking. For spicier shrimp, increase the amount of red pepper flakes.
