- 1 pound Italian sausage (mild, casings removed)
- 1 tablespoon olive oil
- 4 clove garlic (minced)
- 28 ounce crushed tomatoes
- 1 teaspoon dried oregano
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 1 pound penne pasta
- 0.5 cup Parmesan cheese (grated, for serving)
- 1 package Caesar salad kit
Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the mild Italian sausage (removed from casings) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Reduce heat to medium. Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring the sauce to a gentle simmer and cook for 5 minutes to allow the flavors to meld.
- Add the drained penne pasta to the skillet with the sausage and sauce. Toss to coat evenly and heat through for 1-2 minutes.
- Prepare the Caesar salad kit according to package directions.
- Serve the garlic sausage penne hot, topped with grated Parmesan cheese if desired, alongside the Caesar salad.
Notes
If you prefer, you can use whole wheat penne for added fiber. Any leftover pasta can be reheated in a microwave or on the stovetop with a splash of water or broth.
