  1. Slice pork tenderloin into 1-inch thick medallions. Season both sides with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature 145°F). Remove pork from skillet and set aside.
  3. While pork cooks, prepare instant mashed potatoes according to package directions. Steam or microwave frozen green beans until tender-crisp.
  4. Reduce skillet heat to medium. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth and heavy cream, bringing to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until sauce thickens slightly.
  5. Remove skillet from heat and stir in grated Parmesan cheese until melted and smooth. Season sauce with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper, or to taste.
  6. Return pork medallions to the skillet, spooning sauce over them. Serve immediately with instant mashed potatoes and steamed green beans. Garnish with fresh parsley, if desired.
