Instructions
- Slice pork tenderloin into 1-inch thick medallions. Season both sides with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature 145°F). Remove pork from skillet and set aside.
- While pork cooks, prepare instant mashed potatoes according to package directions. Steam or microwave frozen green beans until tender-crisp.
- Reduce skillet heat to medium. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth and heavy cream, bringing to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until sauce thickens slightly.
- Remove skillet from heat and stir in grated Parmesan cheese until melted and smooth. Season sauce with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper, or to taste.
- Return pork medallions to the skillet, spooning sauce over them. Serve immediately with instant mashed potatoes and steamed green beans. Garnish with fresh parsley, if desired.
