Ingredients
- 1 pound shrimp (peeled, deveined, tails removed)
- 1 pound broccoli (cut into bite-sized florets)
- 2 package brown rice (pre-cooked microwave pouches)
- 1 tablespoon olive oil (extra virgin)
- 1 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 1 tablespoon lemon juice (freshly squeezed)
Instructions
- Place broccoli florets in a steamer basket set over 1 inch of boiling water in a medium saucepan. Cover and steam for 5 minutes until bright green and tender-crisp.
- Pat the peeled shrimp dry with paper towels. In a medium bowl, toss shrimp with smoked paprika, garlic powder, and salt.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and sear for 2 to 3 minutes per side until pink, opaque, and cooked through.
- Remove the skillet from heat and drizzle the fresh lemon juice over the hot shrimp.
- Heat the brown rice pouches in the microwave for 90 seconds each per package instructions.
- Plate each serving with a portion of warm brown rice, steamed broccoli, and the garlic-paprika shrimp.
Notes
Shrimp cooks very quickly, so keep an eye on the skillet to ensure they remain tender and succulent.
