  1. Peel the green plantains and slice them into 1-inch thick rounds. Heat 2 cups vegetable oil in a medium heavy-bottomed pot or deep skillet over medium-high heat until it reaches 350°F (175°C).
  2. Carefully fry the plantain slices for 2-3 minutes until lightly golden. Remove with a slotted spoon and drain on paper towels. Immediately smash each piece with a tostone press or the bottom of a heavy glass.
  3. Return the smashed plantains to the hot oil and fry for another 1-2 minutes until crisp and deep golden brown. Sprinkle with 1/4 teaspoon salt immediately after frying. Keep warm.
  4. In a separate large skillet, heat 1 tablespoon olive oil over medium heat. Add half of the minced garlic and sauté for 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes per side until pink and cooked through.
  5. Remove the skillet from heat. Stir in the remaining minced garlic, fresh cilantro, fresh lime juice, and the remaining 1/4 teaspoon salt. Toss to coat the shrimp in the garlic mojo sauce.
  6. Serve the Garlic Mojo Shrimp immediately with the crisp tostones.

Notes

Use a heavy-bottomed pan for frying tostones to maintain a consistent oil temperature. Make sure the oil is hot enough for the second fry to achieve maximum crispness.
