Ingredients
- 2 green plantains
- 2 cup vegetable oil (for frying)
- 12 ounce shrimp (large, peeled, deveined)
- 4 clove garlic (minced)
- 2 tablespoon fresh cilantro (chopped)
- 2 tablespoon lime juice (fresh)
- 1 tablespoon olive oil
- 0.5 teaspoon salt (divided)
Instructions
- Peel the green plantains and slice them into 1-inch thick rounds. Heat 2 cups vegetable oil in a medium heavy-bottomed pot or deep skillet over medium-high heat until it reaches 350°F (175°C).
- Carefully fry the plantain slices for 2-3 minutes until lightly golden. Remove with a slotted spoon and drain on paper towels. Immediately smash each piece with a tostone press or the bottom of a heavy glass.
- Return the smashed plantains to the hot oil and fry for another 1-2 minutes until crisp and deep golden brown. Sprinkle with 1/4 teaspoon salt immediately after frying. Keep warm.
- In a separate large skillet, heat 1 tablespoon olive oil over medium heat. Add half of the minced garlic and sauté for 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes per side until pink and cooked through.
- Remove the skillet from heat. Stir in the remaining minced garlic, fresh cilantro, fresh lime juice, and the remaining 1/4 teaspoon salt. Toss to coat the shrimp in the garlic mojo sauce.
- Serve the Garlic Mojo Shrimp immediately with the crisp tostones.
Notes
Use a heavy-bottomed pan for frying tostones to maintain a consistent oil temperature. Make sure the oil is hot enough for the second fry to achieve maximum crispness.
