Ingredients
- 8 ounce pasta
- 1 tablespoon olive oil
- 1 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 4 clove garlic (minced)
- 1 pint cherry tomatoes (halved)
- 0.5 cup chicken broth
- 0.25 cup fresh basil (chopped)
- 0.25 cup Parmesan cheese (grated)
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Cook 8 ounces pasta according to package directions. Reserve 1/4 cup pasta water before draining. Set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound cubed chicken breast and season with 1/2 teaspoon salt and 1/8 teaspoon black pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add 4 cloves minced garlic to the skillet and cook for 1 minute until fragrant. Add 1 pint halved cherry tomatoes and cook, stirring, until they start to soften and burst, about 3-4 minutes.
- Stir in 1/2 cup chicken broth, the remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Bring to a simmer. Return cooked chicken to the skillet.
- Add the drained pasta, 1/4 cup reserved pasta water, and 1/4 cup chopped fresh basil to the skillet. Toss to combine. Stir in 1/4 cup grated Parmesan cheese until just melted.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
A pinch of red pepper flakes can be added with the garlic for a touch of heat.
