Garlic-Herb Sirloin Steak

Pan-seared top sirloin steak basted in fragrant garlic and herbs, served with sautéed fresh green beans and dairy-free mashed potatoes.

  1. Place diced Russet potatoes in a microwave-safe bowl with 3 tablespoons of water. Cover tightly and microwave on high for 8 minutes until soft. Drain liquid, add 1/2 tablespoon of the olive oil, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper, then mash with a fork until smooth.
  2. Season sirloin steaks on both sides with dried thyme, 1/2 teaspoon of the salt, and remaining 1/4 teaspoon black pepper.
  3. Heat 1 tablespoon of the olive oil in a large cast iron or heavy skillet over medium-high heat. Add steaks and sear for 4 to 5 minutes per side for medium doneness (140°F internal temperature). Add minced garlic in the final minute of cooking, spooning the fragrant oil over the steaks. Transfer steaks to a plate to rest for 5 minutes.
  4. In the same hot skillet, add remaining 1/2 tablespoon olive oil, green beans, remaining 1/4 teaspoon salt, and 2 tablespoons of water. Sauté for 4 minutes over medium heat until tender-crisp.
  5. Slice steaks against the grain and serve alongside the fluffy mashed potatoes and sautéed green beans.

Notes

Mashing potatoes directly with olive oil and cooking water yields creamy mashed potatoes without dairy.
