Instructions
- Cook gluten-free penne pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add gluten-free Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove sausage from skillet and set aside, reserving a tablespoon of drippings.
- Add sliced green bell pepper, red bell pepper, and chopped yellow onion to the skillet with the reserved drippings. Sauté for 3-5 minutes until vegetables are tender-crisp. Stir in minced garlic, dried oregano, and dried basil, cooking for 1 minute until fragrant.
- Stir in diced tomatoes (undrained) and gluten-free chicken broth. Bring to a simmer and cook for 5 minutes, allowing flavors to meld. Season with salt and black pepper to taste.
- Add the cooked sausage and drained pasta to the skillet, tossing to coat everything in the sauce. Cook for 1-2 minutes until heated through. Serve immediately, garnished with optional fresh parsley.
