  1. Cook gluten-free penne pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add gluten-free Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove sausage from skillet and set aside, reserving a tablespoon of drippings.
  3. Add sliced green bell pepper, red bell pepper, and chopped yellow onion to the skillet with the reserved drippings. Sauté for 3-5 minutes until vegetables are tender-crisp. Stir in minced garlic, dried oregano, and dried basil, cooking for 1 minute until fragrant.
  4. Stir in diced tomatoes (undrained) and gluten-free chicken broth. Bring to a simmer and cook for 5 minutes, allowing flavors to meld. Season with salt and black pepper to taste.
  5. Add the cooked sausage and drained pasta to the skillet, tossing to coat everything in the sauce. Cook for 1-2 minutes until heated through. Serve immediately, garnished with optional fresh parsley.

Ensure your Italian sausage and chicken broth are certified gluten-free. For a touch of spice, add a pinch of red pepper flakes with the garlic and herbs.
