- 4 cod fillets (6-ounce, fresh or frozen and thawed)
- 1 head broccoli (cut into florets)
- 1.5 tablespoon olive oil
- 2 clove garlic (minced)
- 1 tablespoon fresh parsley (chopped)
- 1 teaspoon fresh thyme (chopped)
- 0.25 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 lemon (wedges, for serving)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, toss the broccoli florets with 1 tablespoon olive oil, half of the minced garlic, 1/8 teaspoon kosher salt (if using), and 1/8 teaspoon black pepper. Spread in a single layer on one half of the prepared baking sheet.
- Pat cod fillets dry with paper towels. In the same bowl (no need to wash), combine the remaining 1/2 tablespoon olive oil, remaining minced garlic, chopped fresh parsley, chopped fresh thyme, 1/8 teaspoon kosher salt (if using), and 1/8 teaspoon black pepper. Rub this mixture evenly over both sides of the cod fillets.
- Place the seasoned cod fillets on the other half of the baking sheet, alongside the broccoli.
- Roast for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the broccoli is tender-crisp. Cooking time will vary depending on the thickness of the cod.
- Serve immediately with lemon wedges.
Notes
Frozen cod works well; ensure it is fully thawed and patted very dry before seasoning. For crispier broccoli, increase olive oil slightly or roast for an extra 5 minutes before adding fish.
