  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the broccoli florets with 1 tablespoon olive oil, half of the minced garlic, 1/8 teaspoon kosher salt (if using), and 1/8 teaspoon black pepper. Spread in a single layer on one half of the prepared baking sheet.
  3. Pat cod fillets dry with paper towels. In the same bowl (no need to wash), combine the remaining 1/2 tablespoon olive oil, remaining minced garlic, chopped fresh parsley, chopped fresh thyme, 1/8 teaspoon kosher salt (if using), and 1/8 teaspoon black pepper. Rub this mixture evenly over both sides of the cod fillets.
  4. Place the seasoned cod fillets on the other half of the baking sheet, alongside the broccoli.
  5. Roast for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the broccoli is tender-crisp. Cooking time will vary depending on the thickness of the cod.
  6. Serve immediately with lemon wedges.

Notes

Frozen cod works well; ensure it is fully thawed and patted very dry before seasoning. For crispier broccoli, increase olive oil slightly or roast for an extra 5 minutes before adding fish.
