Ingredients
- 4 ounce chicken breast (boneless, skinless, cut into 1-inch pieces)
- 2 ounce pasta
- 1 tablespoon olive oil
- 2 clove garlic (minced)
- 0.5 cup chicken broth
- 0.25 teaspoon dried Italian seasoning
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper (ground)
- 1 cup mixed greens
- 2 tablespoon vinaigrette dressing

Instructions
- Cook pasta according to package directions until al dente. Reserve 1/4 cup pasta cooking water before draining. Set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a small skillet over medium heat. Add chicken breast pieces and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from skillet and set aside.
- To the same skillet, add minced garlic and cook for 30 seconds until fragrant (do not burn).
- Stir in 1/2 cup chicken broth, dried Italian seasoning, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Bring to a gentle simmer. Add the reserved pasta cooking water if the sauce is too thick.
- Return the cooked chicken and drained pasta to the skillet with the sauce. Toss to combine and coat everything evenly.
- In a separate small bowl, toss the mixed greens with 2 tablespoons vinaigrette dressing.
- Serve the garlic-herb chicken pasta immediately with the side salad. Garnish with grated Parmesan cheese, if desired.
Notes
Any short pasta like rotini or farfalle works well here. For extra flavor, you can add a pinch of red pepper flakes to the sauce.
