Garlic Herb Chicken Pasta

Ingredients
- 1 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 12 ounce fettuccine pasta
- 4 clove garlic (minced)
- 1.5 cup chicken broth
- 0.75 cup heavy cream
- 0.5 cup grated Parmesan cheese (grated)
- 0.25 cup fresh parsley (chopped)
- 2 tablespoon fresh chives (chopped)
- 1 Caesar salad kit (10 ounce bag, pre-washed)
- 4 slice garlic bread (store-bought)
Instructions
- Season chicken breast pieces with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
- While chicken cooks, bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce heat to medium-low, stir in heavy cream and remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Simmer for 2-3 minutes until slightly thickened.
- Add drained pasta, cooked chicken, grated Parmesan cheese, fresh parsley, and fresh chives to the skillet. Toss to combine. If the sauce is too thick, add a splash of the reserved pasta water.
- Prepare the Caesar salad kit according to package directions. Bake or toast the store-bought garlic bread according to package directions. Serve the pasta with the salad and garlic bread, topped with extra Parmesan cheese if desired.
Notes
You can use precooked chicken or rotisserie chicken to make this meal even faster. Store leftovers separately from the salad to maintain freshness.
